Ingredients
- Brown Rice Penne noodles
- Parmesan shredded cheese
- Italian blend cheese
- Raw Shrimp (the bigger the better)
- Boneless, Skinless Chicken Breast (cut into bite-sized pieces)
- Butter
- Mince Garlic
- Onion
- Red, green, yellow peppers
- Heavy whipping cream
- Walkerswood jerk seasoning Spices (Suggested Starting Measurements – Adjust to Taste)
- Old Bay: 1.5 – 2.5 teaspoons (for chicken, shrimp, and sauce)
- Tony’s Creole Seasoning (no salt): 1.5 – 2.5 teaspoons (for chicken, shrimp, and sauce)
- Garlic powder: 1/2 – 1 teaspoon (for veggies, chicken, shrimp, and sauce)
- Onion powder: 1/2 – 1 teaspoon (for veggies, chicken, shrimp, and sauce)
- Complete seasoning: 1 teaspoon (for sauce, if desired)
- Walkerswood jerk seasoning: 2-3 tablespoons (for chicken, shrimp, and sauce, adjust for desired heat)
Instructions
- Boil water for noodles.
- Cut veggies up. In a large pan or skillet, melt butter and add minced garlic. Once melted, add veggies, season them with 1/2 – 1 teaspoon garlic powder and 1/2 – 1 teaspoon onion powder, and let veggies sauté until tender-crisp. Remove from pan and set aside.
- Prepare chicken: Cut boneless, skinless chicken breast into bite-sized pieces. Season the chicken thoroughly with 1 teaspoon Old Bay, 1 teaspoon Tony’s Creole Seasoning, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1-1.5 tablespoons jerk seasoning.
- In the same pan, add a little more butter. Cook the seasoned chicken pieces until fully cooked through and slightly browned. Remove from pan and set aside.
- Prepare shrimp: Clean shrimp thoroughly. Season with 1 teaspoon Old Bay, 1 teaspoon Tony’s Creole Seasoning, and 1-1.5 tablespoons jerk seasoning.
- In the same pan (or another if needed), add a little butter. Cook the seasoned shrimp for 2-3 minutes per side until pink and opaque. Do not overcook. Remove from pan and set aside.
- Add noodles into pot with boiled water.
- Now start the sauce. In the large pan, add 1/2 stick of butter with heavy whipping cream.
- Once butter has melted in the cream, add in your cheese, about a cup of shredded cheese. Stir until melted and smooth.
- After cheese melts in sauce, add 1-2 tablespoons jerk seasoning (depends on how spicy).
- Season your sauce with 1/2 – 1 teaspoon Old Bay and 1/2 – 1 teaspoon Tony’s Creole Seasoning. You may also add 1 teaspoon Complete Seasoning if desired. Taste and adjust seasoning as needed.
- Lastly, put it all together: Add the sautéed veggies, cooked chicken, cooked shrimp, and drained brown rice penne to the sauce, tossing gently to combine everything thoroughly. Serve hot.
